Autumny Baked Goods
Usually I like to bring a gift to whomever I’m going to visit. Since autumn is upon us, I wanted bake something for Erin and her housemates that would bring the season to mind. This moist bread that works as breakfast, a snack or dessert was well appreciated and gobbled up.
Pumpkin Chocolate Bread
makes 1 loaf | bake time: 70–75 min.
1 3/4 c. all-purpose flour
1 1/2 c. sugar
1 tsp baking soda
1 tsp cinnamon
1/4 tsp baking powder
1/4 tsp salt
1/8 tsp nutmeg
1 c. chocolate chips
1 c. canned solid pack pumpkin
2 eggs
1/2 c. vegetable oil
1/3 c. water
1. Preheat oven to 350°. Grease 9×5-inch loaf pan.
2. In a large bowl, combine flour, sugar, baking soda, cinnamon, baking powder, salt and nutmeg. Stir in chocolate chips. Set aside.
3. In a small bowl, blend pumpkin, eggs, oil and water. Stir into flour mixture until moistened. Pour into prepared pan.
4. Bake until a toothpick inserted in centre comes out clean, 70–75 minutes. Cool 10 minutes; remove from pan. Cool completely on wire rack.
Note: You can easily double this recipe to use up the whole can of pumpkin since I’m not sure what else you would do with half a can of pumpkin.
